The arrival of spring brings the legumes primeurs or baby vegetables to farmer's markets in Nantes.  The primeurs are harvested while young and tender.  They require only minimal cooking and  can be eaten raw. Nantes is especially known for baby leeks or les poireaux primeurs nantais. Almost all of the French production of baby leeks comes from within a 19-mile radius of Nantes.
