Buckwheat flour is a key ingredient for traditional Galettes Bretonnes (Buckwheat Crêpes).

Buckwheat has been grown in Brittany since the 1400s, though the plant is originally from China. It grows quickly and does better than wheat in the wet climate and poor soils of Brittany. Today it is prized for its dense nutrition and rich, nutty taste. It’s also gluten-free. But historically it was the food of the poor. 

The grain-like seeds or groats (graines de sarrasin) are also popular.
